Recipe: Kate’s Butternut Squash and Carrot Soup

1 large butternut squash given as a gift from my Grandma and also Cora’s Great-Grandma
4 organic carrots
1 small local onion
2 tablespoons olive oil
1 tablespoon better than bouillon
tap water from Old Town, Maine
a little organic lowfat plain yogurt

Rice and Beans

3 cups organic short brown rice
1 can of organic aduki beans

and apples from local apple trees picked by Bill and Cora.

Put it all together for one yummy lunch shared with some really amazing beings!
