Raw Coconut Cream Pie

This recipe is from “The Complete Book of Raw Food”, a really awesome cookbook that I will bring to our next potluck for anyone who would like to learn about it. I also was thinking that perhaps at the next potluck we could try a sort of “ceremony” where we announce the food we brought and its ingredients, or tell a story about it, or suggest the best way to eat it, or something to honor the meal. What do you think?

Raw Coconut Cream Pie Recipe “for Lill”

By: Jinjee and Storm Talifero   Serves: 4    Special Equipment Needed: food processor or blender

 

Ingredients:

For the crust:

1 cup almonds, soaked in water for 4 to 6 hours

1 pinch of sea salt

1/8 cup of olive oil

 

For the filling:

4 bananas

Meat of 2 young coconuts (you’ll need a hammer and something pointy to get into these*)

5 dates, pitted

1/8 cup of flaxseed oil

Cold-packed honey, to taste

Cinnamon, to taste

Nutmeg, to taste

1 avocado (optional)

Directions:

To make the crust, blend nuts in a food processor or blender until they turn to powder. Add the sea salt and olive oil. Blend well, and spoon into pie dish.

To make the filling, blend bananas, coconut meat, dates, flaxseed oil, honey, cinnamon, nutmeg, and avocado (if using).
